Just waiting…

We are expecting company tonight!  A very dear friend is coming out with her husband and daughter to stay the weekend with us so they can see our new house and go out on the boat tomorrow!

A Quick Recipe – Blueberry Overnight Oats

 I don’t know why the picture is so big.  When I have more time I’ll figure out how to fix it.

This was a little too sweet, so I’ll probably cut back on the maple syrup next time.


  • 1/3 c rolled oats
  • 1/3 c unsweetened vanilla almond milk
  • 1/3 c vanilla yogurt
  • 1 tbsp chia seeds
  • <1 tbsp maple syrup (leave this out if you use vanilla yogurt, it’s only needed if you use plain yogurt)
  • <1 tsp cinnamon
  • <1 tsp almond extract
  • 1 tbsp maple almond butter (method below)

Smear the almond butter in the bottom of the jar and up the sides to emulate an almost empty nut butter jar.  Add all ingredients listed above and mix well.  Refrigerate overnight.

In the morning, add fresh blueberries and buckwheat groats for crunch.  Enjoy!

(method for maple almond butter, adapted with ingredients I had onhand from . I used 1 c of roasted almond butter from Sprouts and mixed it with 2-1/2 tbsp maple syrup, 1/2 tsp cinnamon, 1/2 tsp Turbanado Sugar. So crunchy, so good!)
